Ingredients

  • 2 cups cooked chicken, shredded or diced
  • 1 cup pineapple chunks (fresh or canned, drained)
  • 1/2 cup celery, chopped
  • 1/4 cup red onion, finely diced
  • 1/2 cup mayonnaise or Greek yogurt
  • 1 tbsp lemon juice
  • Salt to taste
  • Black pepper to taste
  • 1/3 cup chopped nuts (optional, almonds or cashews)
  • Lettuce leaves or bread for serving

Instructions

  1. Place the cooked chicken in a large bowl.
  2. Add pineapple chunks, chopped celery, and diced red onion.
  3. In a small bowl, mix mayonnaise or Greek yogurt with lemon juice, salt, and black pepper.
  4. Pour the dressing over the chicken mixture and gently stir until well combined.
  5. Cover and chill in the refrigerator for 20–30 minutes to allow flavors to blend.
  6. Serve on lettuce, in sandwiches, or on its own.

Notes

  • Use canned pineapple if needed, but drain well.
  • Rotisserie chicken works great for convenience.
