Ingredients

  • 4 cups fresh watermelon, cubed and seeded
  • 2 tablespoons lime juice
  • 2 tablespoons honey or maple syrup
  • 4 to 5 fresh mint leaves
  • 1/4 cup water

Instructions

  1. Cut the watermelon into cubes and remove any seeds.
  2. Place the watermelon, lime juice, honey or maple syrup, mint leaves, and water into a blender.
  3. Blend until the mixture becomes completely smooth.
  4. If desired, strain the mixture to remove excess pulp for a smoother texture.
  5. Pour the watermelon mixture into popsicle molds, leaving a little space at the top.
  6. Insert popsicle sticks into the molds.
  7. Freeze for at least 4 to 6 hours or until fully solid.
  8. To release the popsicles easily, run the molds under warm water for a few seconds.
  9. Serve immediately while frozen and refreshing.

Notes

  • Honey or maple syrup can be omitted if the watermelon is naturally sweet.
  • Strawberries, raspberries, or pineapple make delicious flavor additions.
  • Coconut milk or Greek yogurt creates a creamier popsicle texture.
  • Frozen watermelon can be used after slightly thawing before blending.
  • Store popsicles in an airtight freezer-safe container for up to 2 weeks.
