Ingredients

1 ½ cups grated Cheddar cheese

⅓ cup grated Parmesan cheese

2 cloves garlic, minced

½ teaspoon dried oregano

½ teaspoon dried basil

Salt and pepper to taste

2 medium zucchini, thinly sliced

5 plum tomatoes, thinly sliced

¼ cup butter

2 tablespoons finely chopped onion

¾ cup fine breadcrumbs

Instructions

Preheat the Oven and Prepare the Dish: Preheat the oven to 375°F (190°C). Butter a 9×9-inch square pan and set aside.

Make the Cheese Mixture: In a large bowl, combine the Cheddar cheese, Parmesan cheese, minced garlic, oregano, basil, and a pinch of salt and pepper. Stir well and set aside.

Layer the Vegetables: Arrange half of the zucchini slices in the prepared pan. Sprinkle a quarter of the cheese mixture over the zucchini. Layer half of the tomato slices on top, then sprinkle with another quarter of the cheese mixture. Repeat the layers with the remaining zucchini, tomato, and cheese mixture.

Prepare the Topping: In a skillet, melt the butter over medium heat. Add the chopped onion and cook until soft and translucent. Stir in the breadcrumbs and cook until golden and crispy.

Finish the Casserole: Sprinkle the breadcrumb mixture evenly over the top of the casserole. Bake for 55 minutes, or until golden brown and the vegetables are tender.

Serve: Let the casserole cool slightly before serving.
