Ingredients

  • 2 cups cooked chicken breast, sliced
  • 4 large tortillas or wraps
  • 1 cup shredded carrot
  • 1 cup shredded cabbage
  • 1 cucumber, thinly sliced
  • 1/4 cup fresh cilantro
  • 1/4 cup green onions, chopped
  • 1/3 cup peanut butter
  • 2 tbsp soy sauce
  • 2 tbsp lime juice
  • 1 tbsp honey
  • 2 cloves garlic, minced
  • 1 tsp grated ginger
  • 24 tbsp warm water (to thin sauce)

Instructions

  1. In a bowl, mix peanut butter, soy sauce, lime juice, honey, garlic, ginger, and warm water until smooth and pourable.
  2. Lay out the tortillas and spread a layer of peanut sauce on each.
  3. Add sliced chicken, shredded carrot, cabbage, cucumber, cilantro, and green onions.
  4. Drizzle additional peanut sauce over the filling.
  5. Fold in the sides of the tortilla and roll tightly into a wrap.
  6. Slice in half and serve immediately.
