Ingredients
- 2 cups cooked chicken breast, sliced
- 4 large tortillas or wraps
- 1 cup shredded carrot
- 1 cup shredded cabbage
- 1 cucumber, thinly sliced
- 1/4 cup fresh cilantro
- 1/4 cup green onions, chopped
- 1/3 cup peanut butter
- 2 tbsp soy sauce
- 2 tbsp lime juice
- 1 tbsp honey
- 2 cloves garlic, minced
- 1 tsp grated ginger
- 2–4 tbsp warm water (to thin sauce)
Instructions
- In a bowl, mix peanut butter, soy sauce, lime juice, honey, garlic, ginger, and warm water until smooth and pourable.
- Lay out the tortillas and spread a layer of peanut sauce on each.
- Add sliced chicken, shredded carrot, cabbage, cucumber, cilantro, and green onions.
- Drizzle additional peanut sauce over the filling.
- Fold in the sides of the tortilla and roll tightly into a wrap.
- Slice in half and serve immediately.
Notes
- You can substitute chicken with shrimp or tofu.
- Add crushed peanuts or bell peppers for extra crunch.
- Use lettuce wraps instead of tortillas for a lighter option.
- Store sauce and filling separately to prevent sogginess.
- Adjust sauce thickness with water as needed.
