Ingredients
- 250g ground beef
- 1 packet taco seasoning
- 1/2 cup water
- 1 cup refried beans
- 4 small flour tortillas
- 1/2 cup enchilada or taco sauce
- 1/2 cup cheddar cheese, shredded
- 1/2 cup mozzarella cheese, shredded
- 1/2 cup tomatoes, diced
- 1/4 cup green onions, chopped
- 2 tbsp olive oil
Instructions
- Cook ground beef in a skillet over medium heat until browned. Drain excess fat.
- Add taco seasoning and water, then simmer until thickened and well combined.
- Brush tortillas lightly with olive oil and cook in a pan or bake until crispy.
- Spread refried beans on one tortilla, then layer with seasoned beef.
- Top with another crispy tortilla to form a sandwich.
- Spread enchilada or taco sauce on top, then sprinkle cheddar and mozzarella cheese.
- Add diced tomatoes and green onions.
- Bake at 200°C (400°F) for 8–10 minutes until cheese is melted and bubbly.
- Cool slightly, slice, and serve.
Notes
- Bake tortillas instead of frying for a lighter option.
- Use ground chicken or turkey as an alternative to beef.
- For a vegetarian version, substitute beans or plant-based meat.
- Add jalapeños, olives, or sour cream for extra flavor.
- Reheat in oven or air fryer to maintain crispiness.
