Ingredients

  • 250g ground beef
  • 1 packet taco seasoning
  • 1/2 cup water
  • 1 cup refried beans
  • 4 small flour tortillas
  • 1/2 cup enchilada or taco sauce
  • 1/2 cup cheddar cheese, shredded
  • 1/2 cup mozzarella cheese, shredded
  • 1/2 cup tomatoes, diced
  • 1/4 cup green onions, chopped
  • 2 tbsp olive oil

Instructions

  1. Cook ground beef in a skillet over medium heat until browned. Drain excess fat.
  2. Add taco seasoning and water, then simmer until thickened and well combined.
  3. Brush tortillas lightly with olive oil and cook in a pan or bake until crispy.
  4. Spread refried beans on one tortilla, then layer with seasoned beef.
  5. Top with another crispy tortilla to form a sandwich.
  6. Spread enchilada or taco sauce on top, then sprinkle cheddar and mozzarella cheese.
  7. Add diced tomatoes and green onions.
  8. Bake at 200°C (400°F) for 8–10 minutes until cheese is melted and bubbly.
  9. Cool slightly, slice, and serve.
