Ingredients
- 1.5 lbs beef chuck or stew meat
- 4 cups potatoes (cut into chunks)
- 4 tbsp butter
- 4 cloves garlic (minced)
- 1 cup beef broth
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp paprika
- 1 tsp thyme or rosemary
- 2 tbsp parsley (optional, chopped)
Instructions
- Season beef with salt, black pepper, and paprika.
- Heat olive oil in a skillet and sear beef until browned on all sides.
- Transfer beef to the slow cooker.
- Add potatoes on top of the beef.
- In a pan, melt butter and sauté garlic until fragrant.
- Add beef broth to the garlic butter mixture and stir.
- Pour the mixture over the beef and potatoes in the slow cooker.
- Sprinkle thyme or rosemary over the top.
- Cover and cook on low for 6–8 hours or high for 3–4 hours until beef is tender and potatoes are soft.
- Gently stir before serving and garnish with parsley if desired.
Notes
- Add carrots or onions for extra flavor and texture.
- Use a cornstarch slurry to thicken the sauce if desired.
- Add Worcestershire sauce for deeper flavor.
- Searing the beef enhances flavor but can be skipped.
- Can be frozen for up to 2 months and reheated as needed.
