Ingredients

  • 1.5 lbs beef chuck or stew meat
  • 4 cups potatoes (cut into chunks)
  • 4 tbsp butter
  • 4 cloves garlic (minced)
  • 1 cup beef broth
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1 tsp thyme or rosemary
  • 2 tbsp parsley (optional, chopped)

Instructions

  1. Season beef with salt, black pepper, and paprika.
  2. Heat olive oil in a skillet and sear beef until browned on all sides.
  3. Transfer beef to the slow cooker.
  4. Add potatoes on top of the beef.
  5. In a pan, melt butter and sauté garlic until fragrant.
  6. Add beef broth to the garlic butter mixture and stir.
  7. Pour the mixture over the beef and potatoes in the slow cooker.
  8. Sprinkle thyme or rosemary over the top.
  9. Cover and cook on low for 6–8 hours or high for 3–4 hours until beef is tender and potatoes are soft.
  10. Gently stir before serving and garnish with parsley if desired.

Notes

  • Add carrots or onions for extra flavor and texture.
  • Use a cornstarch slurry to thicken the sauce if desired.
  • Add Worcestershire sauce for deeper flavor.
  • Searing the beef enhances flavor but can be skipped.
  • Can be frozen for up to 2 months and reheated as needed.
