Ingredients

  • 2 cups all-purpose flour
  • 1 cup rolled oats
  • 3/4 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, melted
  • 8 ounces cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 3 cups peaches, peeled and diced
  • 2 tablespoons granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking pan with parchment paper.
  2. In a large bowl, mix the flour, oats, brown sugar, cinnamon, and salt.
  3. Stir in the melted butter until the mixture becomes crumbly.
  4. Press about two-thirds of the crumble mixture firmly into the bottom of the prepared pan to form the crust.
  5. In another bowl, beat the cream cheese, granulated sugar, egg, and vanilla extract until smooth and creamy.
  6. Spread the cream cheese mixture evenly over the crust layer.
  7. Toss the peaches with sugar, cornstarch, and lemon juice, then spread evenly over the cream layer.
  8. Sprinkle the remaining crumble mixture over the peach layer.
  9. Bake for 40–45 minutes or until the top is golden brown and the filling is set.
  10. Allow the bars to cool completely before slicing into squares and serving.

  • Canned or frozen peaches can be used if fresh peaches are unavailable.
  • Drain canned peaches well before using to avoid excess moisture.
