Ingredients

  • 2 cups rolled oats
  • 1/2 cup almond butter or peanut butter
  • 1/3 cup honey or maple syrup
  • 1/4 cup cocoa powder
  • 1/3 cup mini chocolate chips
  • 2 tablespoons chia seeds
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon peppermint extract
  • 1/4 cup shredded coconut
  • 1/4 teaspoon salt

Instructions

  1. In a large mixing bowl, combine the rolled oats, cocoa powder, chia seeds, and salt.
  2. Add the almond butter, honey or maple syrup, vanilla extract, and peppermint extract.
  3. Mix everything together until the mixture becomes sticky and evenly combined.
  4. Fold in the mini chocolate chips and shredded coconut.
  5. Refrigerate the mixture for 10 minutes if it feels too soft to handle.
  6. Roll the mixture into 14 bite-sized balls.
  7. Place the energy balls on a tray or plate and refrigerate for at least 20 minutes until firm.
