- 1/3 cup mini chocolate chips
- 2 tablespoons chia seeds

- 1/2 teaspoon peppermint extract
- 1/4 cup shredded coconut
- 1/4 teaspoon salt
Instructions
- In a large mixing bowl, combine the rolled oats, cocoa powder, chia seeds, and salt.
- Add the almond butter, honey or maple syrup, vanilla extract, and peppermint extract.
- Mix everything together until the mixture becomes sticky and evenly combined.
- Fold in the mini chocolate chips and shredded coconut.
- Refrigerate the mixture for 10 minutes if it feels too soft to handle.
- Roll the mixture into 14 bite-sized balls.
- Place the energy balls on a tray or plate and refrigerate for at least 20 minutes until firm.
- Serve chilled or store in the refrigerator until ready to eat.
