Ingredients

  • 2 chicken breasts or thighs
  • 3 tablespoons butter
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 3 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 1/2 cup chicken broth
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Season the chicken with salt, black pepper, and paprika.
  2. Heat olive oil and 1 tablespoon butter in a pan over medium heat.
  3. Cook the chicken until golden on both sides and fully cooked through, then remove and set aside.
  4. In the same pan, melt the remaining butter and sauté minced garlic until fragrant.
  5. Add lemon juice, lemon zest, and chicken broth, stirring well and letting the sauce simmer for a few minutes.
  6. Return the chicken to the pan and spoon the sauce over it, letting it cook briefly to absorb flavors.
  7. Garnish with fresh parsley and serve immediately.

Notes

  • Add capers for a briny flavor boost.
  • Include a splash of cream for a richer sauce.
  • Add mushrooms or spinach for extra depth.
  • Serve over pasta, rice, or with roasted vegetables.
  • Use chicken thighs for juicier results.
