Ingredients

  • 1 1/2 cups ricotta cheese
  • 3/4 cup sugar
  • 3 eggs
  • 1 cup almond flour or finely ground almonds
  • 1/2 cup all-purpose flour
  • 1/2 cup butter, softened
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1 tsp lemon zest
  • 1/4 tsp salt
  • 1/4 cup sliced almonds (for topping)
  • Powdered sugar (optional, for dusting)

Instructions

  1. Preheat oven to 180°C (350°F) and grease a tart pan.
  2. In a bowl, mix ricotta and sugar until smooth.
  3. Add eggs one at a time, mixing well after each addition.
  4. Stir in vanilla extract and lemon zest.
  5. In another bowl, combine almond flour, all-purpose flour, baking powder, and salt.
  6. Gradually fold dry ingredients into the ricotta mixture until well combined.
  7. Spread batter evenly into the prepared tart pan.
  8. Sprinkle sliced almonds over the top.
  9. Bake for 35–40 minutes until set and lightly golden.
  10. Allow to cool before dusting with powdered sugar if desired.
  11. Slice and serve.
