Ingredients

  • 2 chicken breasts, thinly sliced
  • 2 sheets puff pastry, thawed
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 egg, beaten (for egg wash)
  • 1 cup mango puree
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 tablespoon rice vinegar
  • 1/2 teaspoon chili flakes
  • 1 teaspoon cornstarch (optional)
  • 2 tablespoons water (for slurry)
  • 1 tablespoon sesame seeds
  • 2 tablespoons chopped green onions

Instructions

  1. Preheat the oven to 200°C (400°F) and line a baking tray with parchment paper.
  2. In a saucepan, combine mango puree, soy sauce, honey, garlic, ginger, rice vinegar, and chili flakes. Simmer over medium heat until slightly thickened.
  3. If desired, mix cornstarch with water and stir into the glaze. Cook for another minute until thickened, then set aside.
  4. Season chicken slices with salt and black pepper.
  5. Heat olive oil in a pan over medium heat and cook the chicken briefly until no longer raw. Let cool slightly.
  6. Roll out puff pastry and cut into strips.
  7. Brush each strip with mango glaze, add chicken pieces, then fold and twist the pastry.
  8. Place twists on the baking tray and brush with beaten egg.
  9. Bake for 18–22 minutes until golden brown and puffed.
  10. Remove from oven and brush with extra mango glaze while warm.
  11. Garnish with sesame seeds and chopped green onions before serving.

  • Chicken thighs can be used instead of breast for a juicier result.
  • Add sriracha or extra chili flakes for more heat.
  • Enhance the glaze with orange or pineapple juice for a citrus twist.
  • For a lighter option, skip puff pastry and serve glazed chicken over rice or noodles.
