Ingredients

  • 2 cups whole wheat flour
  • 1 cup all-purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1/3 cup molasses (blackstrap or regular)
  • 1 1/4 cups buttermilk
  • 2 tbsp butter, melted or softened
  • 1/4 cup oats or seeds (optional)
  • 2 tbsp brown sugar (optional)

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper or lightly grease it.
  2. In a large bowl, mix whole wheat flour, all-purpose flour, baking soda, and salt.
  3. Warm molasses slightly, then mix it with the buttermilk.
  4. Pour the wet mixture into the dry ingredients and gently stir until a sticky dough forms, being careful not to overmix.
  5. Turn dough onto a lightly floured surface and shape into a round loaf.
  6. Place on prepared baking sheet and lightly score a cross on top.
  7. Bake for 35–45 minutes, or until the bread is golden and sounds hollow when tapped on the bottom.
  8. Let cool for 15–20 minutes before slicing.

Notes

  • Do not overmix the dough to avoid a dense texture.
  • Molasses can be swapped with honey or maple syrup, but flavor will be lighter.
  • Mixing flours helps keep the bread tender while still hearty.
  • Check doneness by tapping the bottom of the loaf for a hollow sound.
  • Best enjoyed fresh but also toasts well the next day.
