Ingredients

  • 2 lbs chicken thighs or drumsticks
  • 3 tbsp sambal oelek or chili paste
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 3 tbsp soy sauce
  • 2 tbsp lime juice
  • 2 tbsp brown sugar or honey
  • 2 tbsp oil
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a bowl, mix sambal oelek, garlic, ginger, soy sauce, lime juice, brown sugar or honey, oil, salt, and black pepper to create the marinade.
  2. Coat the chicken thoroughly with the marinade and let it sit for at least 30 minutes (or up to overnight).
  3. Preheat a grill to medium heat.
  4. Grill the chicken for 20–25 minutes, turning occasionally, until fully cooked and slightly charred.
  5. Brush extra marinade on the chicken while grilling if desired.
  6. Remove from grill and let rest for a few minutes before serving.

  • Adjust sambal quantity to control spice level.
  • Use chicken thighs for juicier results.
  • Bake or pan-cook if a grill is unavailable.
  • Add lemongrass or coconut milk for extra flavor depth.
