Ingredients
- 2 lbs chicken thighs or drumsticks
- 3 tbsp sambal oelek or chili paste
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 3 tbsp soy sauce
- 2 tbsp lime juice
- 2 tbsp brown sugar or honey
- 2 tbsp oil
- Salt to taste
- Black pepper to taste
Instructions
- In a bowl, mix sambal oelek, garlic, ginger, soy sauce, lime juice, brown sugar or honey, oil, salt, and black pepper to create the marinade.
- Coat the chicken thoroughly with the marinade and let it sit for at least 30 minutes (or up to overnight).
- Preheat a grill to medium heat.
- Grill the chicken for 20–25 minutes, turning occasionally, until fully cooked and slightly charred.
- Brush extra marinade on the chicken while grilling if desired.
- Remove from grill and let rest for a few minutes before serving.
Notes
- Adjust sambal quantity to control spice level.
- Use chicken thighs for juicier results.
- Bake or pan-cook if a grill is unavailable.
- Add lemongrass or coconut milk for extra flavor depth.
- Marinate overnight for more intense taste.
