Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 tablespoon poppy seeds
  • 2 eggs
  • 1/2 cup milk
  • 2 tablespoons lemon juice
  • 1 tablespoon lemon zest
  • 1/4 cup butter, melted
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar (for glaze)
  • 23 tablespoons lemon juice (for glaze)

Instructions

  1. Preheat oven to 180°C (350°F) and grease a donut pan.
  2. In a large bowl, mix flour, sugar, baking powder, baking soda, salt, and poppy seeds.
  3. In another bowl, whisk eggs, milk, lemon juice, lemon zest, melted butter, and vanilla extract.
  4. Pour wet ingredients into dry ingredients and mix until just combined.
  5. Spoon or pipe the batter into the donut pan.
  6. Bake for 10–12 minutes until lightly golden and springy to the touch.
  7. Let donuts cool slightly before removing from the pan.
  8. In a small bowl, mix powdered sugar with lemon juice to form a smooth glaze.
  9. Dip each donut into the glaze and allow it to set before serving.

Notes

  • Do not overmix the batter to keep donuts light and fluffy.
  • Add yogurt or sour cream for extra moisture.
  • Adjust glaze consistency with more sugar or lemon juice.
  • Try an orange variation by replacing lemon with orange juice and zest.
  • Freeze donuts without glaze for best texture.
