- 1 1/2 cups all-purpose flour

- 2 eggs

- 1 cup powdered sugar (for glaze)
- 2–3 tablespoons lemon juice (for glaze)
Instructions
- Preheat oven to 180°C (350°F) and grease a donut pan.
- In a large bowl, mix flour, sugar, baking powder, baking soda, salt, and poppy seeds.
- In another bowl, whisk eggs, milk, lemon juice, lemon zest, melted butter, and vanilla extract.
- Pour wet ingredients into dry ingredients and mix until just combined.
- Spoon or pipe the batter into the donut pan.
- Bake for 10–12 minutes until lightly golden and springy to the touch.
- Let donuts cool slightly before removing from the pan.
- In a small bowl, mix powdered sugar with lemon juice to form a smooth glaze.
- Dip each donut into the glaze and allow it to set before serving.
Notes
- Do not overmix the batter to keep donuts light and fluffy.
- Add yogurt or sour cream for extra moisture.
- Adjust glaze consistency with more sugar or lemon juice.
- Try an orange variation by replacing lemon with orange juice and zest.
- Freeze donuts without glaze for best texture.
