Ingredients

  • 4 chicken thighs or drumsticks
  • 4 tablespoons butter, melted
  • 4 garlic cloves, minced
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon lemon juice (optional)
  • 1 teaspoon thyme or rosemary (optional)

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. Pat the chicken dry and place it in a baking dish or on a lined baking tray.
  3. In a bowl, mix melted butter, minced garlic, olive oil, salt, pepper, paprika, and optional herbs.
  4. Pour the garlic butter mixture over the chicken, ensuring all pieces are well coated.
  5. Roast for 35–45 minutes, basting occasionally with pan juices, until golden and fully cooked.
  6. Check that the internal temperature reaches 75°C (165°F).
  7. Remove from the oven and let rest for a few minutes.
  8. Garnish with fresh parsley and drizzle with lemon juice if desired before serving.
