Ingredients

  • 3 ripe mangoes, diced
  • 1 red bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1 jalapeño, minced
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons fresh lime juice
  • 1/2 teaspoon salt, or to taste

Instructions

  1. Peel and dice the mangoes into small bite-sized pieces.
  2. Finely chop the red onion, red bell pepper, and jalapeño.
  3. Combine the diced mangoes, red bell pepper, red onion, and jalapeño in a medium mixing bowl.
  4. Add the chopped cilantro and fresh lime juice.
  5. Season with salt to taste.
  6. Gently stir until all ingredients are evenly combined.
  7. Let the salsa rest for 5–10 minutes to allow the flavors to meld.
  8. Serve immediately with chips or as a topping for your favorite dishes.

Notes

  • Use ripe but slightly firm mangoes for the best texture.
  • Adjust the amount of jalapeño to control the heat level.
  • Add diced avocado for extra creaminess.
  • Mix in black beans or corn for a heartier salsa.
  • Pineapple or peach can be added for additional sweetness.
  • Fresh parsley may be substituted for cilantro if desired.
  • Store leftovers in an airtight container in the refrigerator for up to 2 days.
  • Freezing is not recommended as the texture may become watery after thawing.
