Ingredients

  • 1 pound ground beef
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 2 cups enchilada sauce
  • 6 corn tortillas, cut into strips
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh cilantro, chopped for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the chopped onion and cook until softened, then stir in the garlic and cook until fragrant.
  3. Add the ground beef and cook until browned, breaking it apart as it cooks.
  4. Season the beef with chili powder, cumin, paprika, salt, and black pepper.
  5. Stir in the enchilada sauce, black beans, and corn kernels.
  6. Add the tortilla strips and mix them into the skillet.
  7. Simmer for several minutes until the tortillas soften slightly and absorb flavor.
  8. Sprinkle cheddar cheese and Monterey Jack cheese evenly over the top.
  9. Cover the skillet and cook until the cheese is melted completely.
  10. Garnish with fresh cilantro and serve warm.

Notes

  • Ground turkey or shredded chicken can replace the ground beef for a lighter option.
  • Bell peppers, zucchini, or spinach add extra vegetables and color.
  • Fire-roasted tomatoes or chipotle peppers create a smoky flavor.
  • Top with avocado, sour cream, or crushed tortilla chips before serving.
  • Add extra enchilada sauce while reheating if the mixture becomes too thick.
