Ingredients

  • 1 cup uncooked long-grain white rice
  • 1 lb chicken breasts or thighs, cut into bite-sized pieces
  • 1 cup tzatziki sauce (store-bought or homemade)
  • 1 ¾ cups chicken broth or water
  • 2 cloves garlic, minced
  • 2 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • Salt and black pepper, to taste
  • Optional toppings: diced cucumbers, cherry tomatoes, fresh dill, feta cheese

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. In the dish, combine uncooked rice, tzatziki, chicken broth, garlic, lemon juice, olive oil, oregano, salt, and pepper.
  3. Stir in chicken pieces, spreading them evenly.
  4. Cover tightly with foil and bake for 40–50 minutes, until rice is tender and chicken is fully cooked.
  5. Remove from oven, fluff rice, and let sit uncovered for 5 minutes.
  6. Top with more tzatziki, veggies, or feta as desired and serve warm.
