Ingredients

  • 5 cups fresh baby spinach
  • 1 ripe mango, peeled and diced
  • 1 cup fresh blueberries
  • 1/4 small red onion, thinly sliced
  • 1/4 cup sliced almonds or walnuts
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon honey
  • Salt and black pepper to taste

Instructions

  1. Place the fresh baby spinach in a large salad bowl.
  2. Add the diced mango, blueberries, and thinly sliced red onion.
  3. Sprinkle sliced almonds or walnuts and feta cheese over the salad.
  4. In a small bowl, whisk together olive oil, balsamic vinegar, honey, salt, and black pepper.
  5. Drizzle the dressing over the salad just before serving.
  6. Toss gently until all ingredients are evenly coated.
  7. Serve immediately for the freshest flavor and texture.

Notes

  • Add grilled chicken, shrimp, salmon, or chickpeas for extra protein.
  • Use sunflower seeds or pecans for additional crunch.
  • Goat cheese can be substituted for feta cheese for a creamier flavor.
  • Fresh blueberries work best, but thawed frozen blueberries may be used if necessary.
  • Store dressing separately if preparing ahead of time.
  • Arugula, mixed greens, or kale can replace spinach.
