Ingredients

  • 2 cups cooked chicken breast, shredded
  • 2 cups green cabbage, shredded
  • 1 cup red cabbage, shredded
  • 1 cup carrots, julienned
  • 3 green onions, sliced
  • 1/4 cup fresh cilantro, chopped
  • 1 cup crispy wonton strips or noodles
  • 1/3 cup almonds or cashews
  • 2 tablespoons sesame seeds
  • 3 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon honey or sugar
  • 2 garlic cloves, minced
  • 1 teaspoon fresh ginger, grated

Instructions

  1. Prepare all ingredients by shredding the chicken and cabbage, julienning the carrots, and slicing the green onions.
  2. In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, honey, minced garlic, and grated ginger to make the dressing.
  3. In a large bowl, combine the shredded chicken, green cabbage, red cabbage, carrots, green onions, and cilantro.
  4. Pour the dressing over the salad and toss well to coat evenly.
  5. Just before serving, add crispy wonton strips, nuts, and sesame seeds for crunch.
  6. Serve immediately while fresh and crisp.
