Ingredients

  • 3 cups fresh broccoli florets, chopped into bite-sized pieces
  • 4 cups baby spinach
  • 1 cup fresh blueberries
  • 1/4 red onion, thinly sliced
  • 1/4 cup sunflower seeds or sliced almonds
  • 1/3 cup feta cheese or goat cheese, crumbled (optional)
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice or apple cider vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Chop the broccoli into small bite-sized florets.
  2. Place the broccoli, baby spinach, blueberries, and red onion into a large salad bowl.
  3. Sprinkle the sunflower seeds or sliced almonds over the salad.
  4. Add crumbled feta or goat cheese if desired.
  5. In a small bowl or jar, whisk together the olive oil, lemon juice or apple cider vinegar, honey, Dijon mustard, salt, and black pepper.
  6. Drizzle the dressing over the salad.
  7. Toss gently until everything is evenly coated.
  8. Serve immediately or chill briefly before serving.

Notes

  • Fresh blueberries provide the best texture and flavor.
  • Lightly blanching the broccoli creates a softer texture if preferred.
  • Walnuts or pecans can replace sunflower seeds for extra richness.
  • Keep the dressing separate until serving for maximum freshness.
  • Add grilled chicken, salmon, or chickpeas for extra protein.
