Ingredients

  • 1 cup blueberries (fresh or frozen)
  • 1/2 ripe avocado
  • 1/2 cup Greek yogurt or plant-based yogurt
  • 1/2 cup milk of choice
  • 12 tbsp lemon juice
  • 1/2 tsp lemon zest (optional)
  • 12 tbsp honey or maple syrup
  • 1/2 tsp vanilla extract
  • 1/2 cup ice (optional)

Instructions

  1. Add blueberries and avocado to a blender.
  2. Add yogurt, milk, lemon juice, lemon zest, honey or maple syrup, and vanilla extract.
  3. Blend until smooth and creamy.
  4. If too thick, add more milk and blend again until desired consistency is reached.
  5. Taste and adjust sweetness or lemon level as needed.
  6. Pour into a glass and serve immediately.
