Ingredients

  • 1 pound ground beef
  • 8 ounces noodles of choice
  • 1 tablespoon sesame oil
  • 3 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon gochujang or chili paste
  • 1 tablespoon rice vinegar
  • 1/2 cup beef broth or water
  • 1 tablespoon cornstarch
  • 2 green onions, sliced
  • 1 tablespoon sesame seeds
  • 1/4 teaspoon black pepper
  • 1 cup shredded carrots or spinach (optional)

Instructions

  1. Cook the noodles according to package instructions, then drain and set aside.
  2. Heat sesame oil in a large skillet over medium-high heat.
  3. Add the ground beef and cook until browned, breaking it apart as it cooks.
  4. Stir in the garlic and ginger and cook for 1 minute until fragrant.
  5. In a small bowl, whisk together the soy sauce, brown sugar, gochujang, rice vinegar, broth, and cornstarch.
  6. Pour the sauce into the skillet and stir until it thickens slightly and coats the beef.
  7. Add shredded carrots or spinach if using and cook briefly until tender.
  8. Toss the cooked noodles into the skillet and mix until evenly coated.
  9. Garnish with green onions and sesame seeds before serving.

  • Ramen, udon, rice noodles, or spaghetti all work well in this recipe.
  • Adjust the amount of gochujang to control the spice level.
  • Ground turkey or chicken can replace the beef for a lighter option.
