Ingredients

  • 1.5 lbs boneless or bone-in chicken thighs or breasts
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 3 cloves garlic, minced
  • 2 tbsp za’atar spice blend
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Optional garnish: fresh parsley, lemon wedges, drizzle of tahini

Instructions

  1. In a bowl, whisk together olive oil, lemon juice, garlic, za’atar, salt, and pepper.
  2. Add chicken to the marinade, coating well. Marinate for at least 30 minutes or up to 24 hours in the fridge.
  3. Preheat oven to 400°F or heat grill over medium-high heat.
  4. Cook chicken until golden and cooked through — 25–30 minutes in the oven or 6–7 minutes per side on the grill.
  5. Let rest for a few minutes before serving. Garnish with parsley, lemon wedges, or tahini if desired.
