Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup butter, melted
- 1 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 3/4 cup white chocolate chips or chunks
- 3/4 cup fresh or frozen raspberries
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 180°C (350°F) and line a baking pan with parchment paper.
- In a bowl, mix melted butter and brown sugar until smooth.
- Add eggs and vanilla extract, stirring until fully combined.
- Fold in the flour and salt until a soft batter forms.
- Gently mix in white chocolate and raspberries, being careful not to crush the berries.
- Spread the batter evenly into the prepared pan and smooth the top.
- Bake for 25–30 minutes until the edges are golden and the center is set.
- Allow to cool completely before slicing into squares.
Notes
- Use frozen raspberries straight from the freezer to prevent excess moisture.
- Avoid overmixing to keep the blondies soft and tender.
- Add chopped nuts for extra crunch if desired.
- Try dark chocolate instead of white chocolate for a richer flavor.
- Store in an airtight container to maintain freshness.
