Ingredients

  • 1/2 lb extra-lean ground beef or ground turkey
  • 23 large low-carb or whole wheat tortillas
  • 1/2 cup reduced-fat shredded cheddar cheese
  • 1/4 cup pickles, sliced
  • 1/4 cup diced onions
  • 1/2 cup shredded lettuce
  • 2 tbsp light mayonnaise
  • 1 tbsp ketchup
  • 1 tsp mustard
  • Olive oil spray
  • 1/2 tsp garlic powder
  • Salt and pepper, to taste
  • Optional: diced tomatoes, hot sauce
  • Optional: small corn tortilla or low-point tostada for added crunch

Instructions

  1. Brown the ground beef or turkey in a skillet over medium heat. Season with garlic powder, salt, and pepper. Cook until fully browned, then remove from heat.
  2. In a small bowl, mix together light mayonnaise, ketchup, and mustard to make the burger sauce.
  3. Lay out a tortilla and add a spoonful of sauce in the center. Layer with cooked beef, shredded cheese, diced onions, pickles, and lettuce.
  4. If using, place a small crisp tortilla or tostada on top for extra crunch.
  5. Fold the tortilla edges inward, working in a circle to form a sealed wrap.
  6. Spray a skillet with olive oil spray and place the wrap seam-side down over medium heat.
  7. Cook for 2–3 minutes per side, pressing gently with a spatula, until golden brown and crispy.
  8. Slice and serve hot with extra sauce or your favorite light dip.

Notes

  • Swap beef for ground turkey or veggie crumbles for a lighter or meatless option.
  • Add jalapeños or mushrooms for extra flavor.
  • Use taco seasoning and salsa for a taco-inspired twist.
  • Reheat in a skillet to keep the crunch; avoid microwaving.
  • Bake at 400°F for 10–12 minutes if preferred over pan-frying.
