Ingredients

  • 3 1/2 cups all-purpose flour
  • 1 cup warm milk
  • 2 1/4 teaspoons active dry yeast
  • 1/3 cup granulated sugar
  • 2 large eggs
  • 1/3 cup unsalted butter, softened
  • 1/2 teaspoon salt
  • 1/2 cup brown sugar
  • 2 teaspoons ground cinnamon
  • 1/4 cup butter, melted
  • 1/2 cup pistachio cream
  • 1/4 cup chopped pistachios
  • 4 oz (115g) cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 23 tablespoons milk

Instructions

  1. In a small bowl, combine warm milk, yeast, and a teaspoon of sugar. Let it sit for 5–10 minutes until foamy.
  2. In a large bowl, mix flour, remaining sugar, and salt.
  3. Add the yeast mixture, eggs, and softened butter to the dry ingredients and mix until a dough forms.
  4. Knead the dough for 8–10 minutes until smooth and elastic. Cover and let rise for 1–1.5 hours until doubled in size.
  5. Roll the dough into a large rectangle on a floured surface.
  6. Spread melted butter over the dough, then sprinkle evenly with brown sugar and cinnamon.
  7. Roll the dough tightly into a log and cut into 9–12 equal rolls.
  8. Place rolls in a greased baking dish, cover, and let rise again for 30–40 minutes until puffy.
  9. Preheat oven to 180°C (350°F).
  10. Bake for 20–25 minutes until golden brown.
  11. While still warm, spread pistachio cream over the rolls.
  12. In a bowl, mix cream cheese, powdered sugar, vanilla extract, and milk until smooth to form a glaze.
  13. Drizzle the glaze over the warm rolls and sprinkle with chopped pistachios before serving.
