- 3 1/2 cups all-purpose flour
- 1/4 cup granulated sugar
- 2 1/4 teaspoons instant yeast (1 packet)
- 3/4 cup warm milk (about 110°F)
- 4 tablespoons unsalted butter, melted
- 2 large eggs
- 1/2 teaspoon salt
- 1 tablespoon vanilla extract
- Powdered sugar, for dusting
- Vegetable oil, for frying
Instructions
- Combine warm milk, granulated sugar, and instant yeast in a bowl. Let sit for 5–10 minutes until foamy.
- In a large bowl, mix flour and salt.
- Add yeast mixture, eggs, melted butter, and vanilla extract to the flour. Stir until a dough forms.
- Knead the dough on a floured surface for 8–10 minutes until smooth and elastic.
- Place dough in a greased bowl, cover, and let rise in a warm place for 1–2 hours, until doubled in size.
- Roll out dough to 1/2-inch thickness and cut into squares or circles.
- Heat vegetable oil in a deep pot to 350°F (175°C). Fry beignets in batches for 2–3 minutes per side, until golden brown.
- Drain on paper towels and dust with powdered sugar while warm.
Notes
- Add cinnamon to the dough or powdered sugar for a spiced version.
- Fill with jam or pastry cream using a piping bag after frying.
- Dip in glaze instead of using powdered sugar for a different finish.
- Reheat in oven or microwave for best texture; avoid refrigeration.
