Ingredients

  • 3 1/2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 2 1/4 teaspoons instant yeast (1 packet)
  • 3/4 cup warm milk (about 110°F)
  • 4 tablespoons unsalted butter, melted
  • 2 large eggs
  • 1/2 teaspoon salt
  • 1 tablespoon vanilla extract
  • Powdered sugar, for dusting
  • Vegetable oil, for frying

Instructions

  1. Combine warm milk, granulated sugar, and instant yeast in a bowl. Let sit for 5–10 minutes until foamy.
  2. In a large bowl, mix flour and salt.
  3. Add yeast mixture, eggs, melted butter, and vanilla extract to the flour. Stir until a dough forms.
  4. Knead the dough on a floured surface for 8–10 minutes until smooth and elastic.
  5. Place dough in a greased bowl, cover, and let rise in a warm place for 1–2 hours, until doubled in size.
  6. Roll out dough to 1/2-inch thickness and cut into squares or circles.
  7. Heat vegetable oil in a deep pot to 350°F (175°C). Fry beignets in batches for 2–3 minutes per side, until golden brown.
  8. Drain on paper towels and dust with powdered sugar while warm.

Notes

  • Add cinnamon to the dough or powdered sugar for a spiced version.
  • Fill with jam or pastry cream using a piping bag after frying.
  • Dip in glaze instead of using powdered sugar for a different finish.
  • Reheat in oven or microwave for best texture; avoid refrigeration.
