Ingredients

  • 4 boneless, skinless chicken breasts or thighs
  • 1 teaspoon salt

  • 1 teaspoon paprika
  • 3 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 4 oz cream cheese, softened
  • 1/2 cup grated parmesan cheese
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 teaspoon Italian seasoning
  • 1 tablespoon butter or olive oil
  • 1 tablespoon cornstarch (optional, for thickening)
  • 2 tablespoons fresh parsley or basil, chopped (for garnish)

Instructions

  1. Season the chicken with salt, black pepper, and paprika.
  2. Optional: Sear the chicken in a pan with butter or olive oil over medium heat until lightly golden for extra flavor.
  3. Place the chicken in the slow cooker.
  4. Add garlic, onion, chicken broth, sun-dried tomatoes, and Italian seasoning.
  5. Cover and cook on low for 5 to 6 hours or on high for 3 to 4 hours until the chicken is tender.
  6. About 30 minutes before serving, add cream cheese, heavy cream, and parmesan cheese.
  7. Stir gently until the cheeses melt and the sauce becomes smooth and creamy.
  8. If needed, mix cornstarch with a little water and stir it in to thicken the sauce.
  9. Cook uncovered for the remaining time to allow the sauce to thicken slightly.
  10. Taste and adjust seasoning if needed.
  11. Serve warm, spooning the creamy sauce over the chicken and garnish with fresh herbs.
