Ingredients
- 3 fresh peaches, sliced
- 1 cup strawberries, halved
- 1 cup blueberries
- 1 cup grapes, halved
- 1 cup pineapple chunks
- 2 tablespoons fresh mint leaves, chopped
- 2 tablespoons honey
- 2 tablespoons fresh lemon juice
- 1 teaspoon lemon zest
Instructions
- Wash and prepare all the fruit by slicing the peaches and strawberries and halving the grapes if needed.
- Place all the prepared fruit into a large mixing bowl.
- In a small bowl, whisk together honey, lemon juice, and lemon zest until well combined.
- Pour the dressing over the fruit.
- Gently toss everything together to coat evenly without crushing the fruit.
- Sprinkle chopped fresh mint over the salad and mix lightly.
- Refrigerate for 20–30 minutes before serving to allow flavors to blend.
- Serve chilled and enjoy.
Notes
- Use ripe but firm peaches for the best texture.
- Toss peaches with a little lemon juice to prevent browning.
- You can add raspberries, blackberries, mango, or kiwi for variation.
- For a tropical twist, add a splash of orange juice or shredded coconut.
- Adjust honey depending on the sweetness of the fruit.
- Store in an airtight container in the refrigerator for up to 2 days.
- Stir gently before serving again as fruit may release juices.
