Ingredients

  • 4 cups mixed spring greens
  • 100g goat cheese, crumbled
  • 1 cup strawberries or seasonal berries, sliced
  • 1 cup asparagus, trimmed
  • 1/2 cup radishes, thinly sliced
  • 1/4 cup red onion, thinly sliced
  • 2 tbsp olive oil

Instructions

  1. Wash and prepare the spring greens, asparagus, and radishes.
  2. Blanch the asparagus in boiling water for 2–3 minutes, then transfer to cold water to keep it tender-crisp.
  3. Slice the strawberries, radishes, and red onion thinly.
  4. In a small bowl, whisk together olive oil, lemon juice or balsamic vinegar, honey, salt, and pepper to make the dressing.
  5. Arrange the spring greens on a large serving platter or bowl.
  6. Top with asparagus, strawberries, radishes, red onion, and crumbled goat cheese.
  7. Drizzle the dressing over the salad.
  8. Sprinkle with toasted nuts or seeds if using, toss gently, and serve immediately.
