Ingredients

  • 1 1/2 lbs chicken breasts or thighs
  • 1/4 cup honey
  • 1/4 cup fresh lime juice (about 2 limes)
  • 1 teaspoon lime zest
  • 2 tablespoons soy sauce
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons chopped fresh cilantro (optional, for garnish)

Instructions

  1. In a bowl, whisk together honey, lime juice, lime zest, soy sauce, garlic, olive oil, salt, and pepper.
  2. Place chicken in a shallow dish and pour marinade over it. Toss to coat. Marinate for at least 20 minutes (or up to 2 hours for deeper flavor).
  3. Heat a skillet over medium heat and add a drizzle of oil. Add chicken and cook 6–8 minutes per side, or until golden and cooked through.
  4. Let the sauce reduce slightly in the pan, spooning over the chicken to glaze.
  5. Remove from heat and garnish with chopped cilantro and red pepper flakes if using. Serve warm.

Notes

  • Use fresh lime juice for the best flavor, but bottled can work in a pinch.
  • Try grilling the chicken for a smoky variation.
  • Swap chicken with shrimp or tofu for a different protein option.
  • Add a splash of rice vinegar for extra tang.
  • Bake at 400°F (200°C) for 20–25 minutes if preferred over pan-cooking.
