Ingredients
- 1 1/2 lbs chicken breasts or thighs
- 1/4 cup honey
- 1/4 cup fresh lime juice (about 2 limes)
- 1 teaspoon lime zest
- 2 tablespoons soy sauce
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 2 tablespoons chopped fresh cilantro (optional, for garnish)
Instructions
- In a bowl, whisk together honey, lime juice, lime zest, soy sauce, garlic, olive oil, salt, and pepper.
- Place chicken in a shallow dish and pour marinade over it. Toss to coat. Marinate for at least 20 minutes (or up to 2 hours for deeper flavor).
- Heat a skillet over medium heat and add a drizzle of oil. Add chicken and cook 6–8 minutes per side, or until golden and cooked through.
- Let the sauce reduce slightly in the pan, spooning over the chicken to glaze.
- Remove from heat and garnish with chopped cilantro and red pepper flakes if using. Serve warm.
Notes
- Use fresh lime juice for the best flavor, but bottled can work in a pinch.
- Try grilling the chicken for a smoky variation.
- Swap chicken with shrimp or tofu for a different protein option.
- Add a splash of rice vinegar for extra tang.
- Bake at 400°F (200°C) for 20–25 minutes if preferred over pan-cooking.
