Instructions
- Preheat oven to 400°F (200°C).
- Toss diced sweet potatoes with olive oil, salt, and pepper. Spread on a baking sheet and roast for 25–30 minutes until tender and caramelized.
- Arrange baguette slices on a separate baking sheet and toast in the oven for 5–7 minutes until golden and crisp.
- Spread a generous layer of softened goat cheese onto each toasted baguette slice.
- Top with a spoonful of roasted sweet potatoes.
- If desired, drizzle with honey or balsamic glaze and garnish with chopped herbs.
- Serve warm or at room temperature.
