- 2 cups cooked chicken breast, shredded or diced
- 1 cup corn kernels, fresh or grilled
- 1 medium cucumber, diced
- 1/4 cup red onion, finely chopped
- 1/3 cup mayonnaise
- 1/3 cup sour cream or Greek yogurt
- 2 tbsp lime juice
- 1 tsp chili powder
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/3 cup cotija cheese or feta cheese, crumbled
- 2 tbsp fresh cilantro, chopped
Instructions
- Place the cooked chicken, corn kernels, diced cucumber, and chopped red onion into a large mixing bowl.
- In a separate bowl, combine mayonnaise, sour cream or Greek yogurt, lime juice, chili powder, garlic powder, salt, and black pepper.
- Whisk the dressing until smooth and creamy.
- Pour the dressing over the chicken and vegetables.
- Gently mix until everything is evenly coated.
- Fold in the crumbled cotija cheese and chopped cilantro.
- Taste the salad and adjust seasoning if needed, adding more lime juice or chili powder.
- Chill the salad for 15–20 minutes before serving to allow the flavors to blend.
Notes
- Rotisserie chicken works well and saves preparation time.
- Grilled or roasted corn adds extra smoky flavor.
- Diced avocado can be added for extra creaminess.
- Jalapeños or diced bell peppers add heat and color.
- For a lighter dressing, replace some or all of the mayonnaise with Greek yogurt.
