Ingredients

  • 2 cups cooked chicken breast, shredded or diced
  • 1 cup corn kernels, fresh or grilled
  • 1 medium cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/3 cup mayonnaise
  • 1/3 cup sour cream or Greek yogurt
  • 2 tbsp lime juice
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/3 cup cotija cheese or feta cheese, crumbled
  • 2 tbsp fresh cilantro, chopped

Instructions

  1. Place the cooked chicken, corn kernels, diced cucumber, and chopped red onion into a large mixing bowl.
  2. In a separate bowl, combine mayonnaise, sour cream or Greek yogurt, lime juice, chili powder, garlic powder, salt, and black pepper.
  3. Whisk the dressing until smooth and creamy.
  4. Pour the dressing over the chicken and vegetables.
  5. Gently mix until everything is evenly coated.
  6. Fold in the crumbled cotija cheese and chopped cilantro.
  7. Taste the salad and adjust seasoning if needed, adding more lime juice or chili powder.
  8. Chill the salad for 15–20 minutes before serving to allow the flavors to blend.

Notes

  • Rotisserie chicken works well and saves preparation time.
  • Grilled or roasted corn adds extra smoky flavor.
  • Diced avocado can be added for extra creaminess.
  • Jalapeños or diced bell peppers add heat and color.
  • For a lighter dressing, replace some or all of the mayonnaise with Greek yogurt.
