Ingredients

  • 1 sheet puff pastry, thawed
  • 1/4 cup strawberry jam or preserves
  • 23 tbsp granulated sugar
  • Optional: 2 tbsp finely chopped fresh strawberries
  • Optional: 1/2 tsp lemon zest or vanilla extract

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. On a lightly floured surface, roll out the puff pastry into a rectangle.
  3. Spread a thin layer of strawberry jam evenly over the surface, leaving a small border around the edges. Add optional chopped strawberries, lemon zest, or vanilla extract if using.
  4. Sprinkle 1 tbsp of sugar over the jam layer.
  5. Fold the long sides of the pastry inward toward the center, then fold again so both sides meet in the middle. Fold one side over the other like a book to form a log.
  6. Chill the log in the fridge for 10–15 minutes for easier slicing.
  7. Slice into 1/2-inch pieces and place cut-side up on the prepared baking sheet, spacing them apart.
  8. Sprinkle the tops with remaining sugar.
  9. Bake for 12–15 minutes, flipping halfway if desired, until golden and crisp.
  10. Let cool completely before serving.

  • Chilling the log before slicing helps maintain the shape.
  • Flip halfway through baking for even browning on both sides.
  • Try raspberry or apricot preserves for variation.
