Ingredients

  • 1 1/2 cups fresh strawberries, chopped
  • 1 3/4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 3/4 cup sugar
  • 1/2 cup milk
  • 1/2 cup vegetable oil or melted butter
  • 1 teaspoon vanilla extract

For the Strawberry Glaze:

  • 1 cup powdered sugar
  • 23 tablespoons strawberry puree (blended fresh strawberries)
  • 1 teaspoon lemon juice (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease or line a 9×5-inch loaf pan with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, and salt.
  3. In another bowl, beat the eggs, sugar, milk, oil, and vanilla extract until smooth.
  4. Gradually stir the dry ingredients into the wet ingredients until just combined—do not overmix.
  5. If the strawberries are very juicy, toss them in a little flour before folding them into the batter.
  6. Gently fold in the chopped strawberries.
  7. Pour the batter into the prepared loaf pan and bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let the loaf cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  9. For the glaze, blend fresh strawberries into a puree and mix 2–3 tablespoons of it with powdered sugar and optional lemon juice until smooth.
  10. Drizzle the glaze over the cooled loaf and let it set before slicing and serving.

  • Let the bread cool completely before glazing to prevent the glaze from soaking in.
  • Add lemon zest to the batter for a citrusy twist.
  • White chocolate chips make a delicious addition for a richer loaf.
