Ingredients
- 2–4 chicken breasts or thighs
- 1 cup fresh strawberries, sliced
- 1/4 cup fresh basil, chopped
- 2 tbsp olive oil
- 3 tbsp balsamic vinegar
- 1 tbsp honey
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium heat.
- Season the chicken with salt and pepper.
- Cook the chicken for 6–8 minutes per side until golden and fully cooked through.
- While the chicken cooks, slice the strawberries and chop the basil.
- In a small bowl, mix balsamic vinegar, honey, and minced garlic.
- Pour the glaze over the cooked chicken and let it simmer for 2–3 minutes until slightly thickened.
- Remove from heat and top with sliced strawberries and fresh basil.
- Serve warm with rice, quinoa, or salad if desired.
Notes
- Add arugula or spinach for extra greens.
- Increase balsamic vinegar for a tangier flavor.
- Top with toasted almonds or pine nuts for crunch.
- Use chicken thighs for a juicier result.
- Best enjoyed fresh but can be stored up to 2 days.
