Ingredients

  • 24 chicken breasts or thighs
  • 1 cup fresh strawberries, sliced
  • 1/4 cup fresh basil, chopped
  • 2 tbsp olive oil
  • 3 tbsp balsamic vinegar
  • 1 tbsp honey
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Season the chicken with salt and pepper.
  3. Cook the chicken for 6–8 minutes per side until golden and fully cooked through.
  4. While the chicken cooks, slice the strawberries and chop the basil.
  5. In a small bowl, mix balsamic vinegar, honey, and minced garlic.
  6. Pour the glaze over the cooked chicken and let it simmer for 2–3 minutes until slightly thickened.
  7. Remove from heat and top with sliced strawberries and fresh basil.
  8. Serve warm with rice, quinoa, or salad if desired.
