Ingredients

  • 3 ripe bananas, mashed
  • 1 cup fresh strawberries, chopped

Instructions

  1. Preheat oven to 350°F (175°C) and grease or line a loaf pan with parchment paper.
  2. In a large bowl, mash the bananas until smooth.
  3. Whisk in the eggs, sugar, oil, and vanilla extract until fully combined.
  4. In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon.
  5. Gently stir the dry ingredients into the wet mixture until just combined—do not overmix.
  6. Coat chopped strawberries in a little flour (optional), then fold them into the batter.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
