Ingredients

  • 1 lb spicy breakfast sausage
  • 8 oz cream cheese, softened
  • 1 can (10 oz) Rotel tomatoes with green chilies, well drained
  • 1 1/2 cups shredded cheddar cheese
  • 1 1/2 cups all-purpose baking mix (like Bisquick)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine sausage, cream cheese, drained Rotel, shredded cheese, baking mix, garlic powder, and onion powder.
  3. Mix until fully combined—hands work best for even blending.
  4. Roll mixture into 1 to 1 1/2 inch balls and place on prepared baking sheet, spaced apart.
  5. Bake for 18–22 minutes, or until golden brown and cooked through.
  6. Let cool slightly before serving.

Notes

  • Drain Rotel thoroughly to reduce moisture and greasiness.
  • Use hot or mild Rotel and cheese depending on desired spice level.
  • Add cayenne or smoked paprika for extra heat and flavor.
  • Reheat in oven for best texture; avoid microwaving for too long.
  • Great served with dipping sauces or alongside salads.
