Ingredients
- 1 lb spicy breakfast sausage
- 8 oz cream cheese, softened
- 1 can (10 oz) Rotel tomatoes with green chilies, well drained
- 1 1/2 cups shredded cheddar cheese
- 1 1/2 cups all-purpose baking mix (like Bisquick)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
Instructions
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a large bowl, combine sausage, cream cheese, drained Rotel, shredded cheese, baking mix, garlic powder, and onion powder.
- Mix until fully combined—hands work best for even blending.
- Roll mixture into 1 to 1 1/2 inch balls and place on prepared baking sheet, spaced apart.
- Bake for 18–22 minutes, or until golden brown and cooked through.
- Let cool slightly before serving.
Notes
- Drain Rotel thoroughly to reduce moisture and greasiness.
- Use hot or mild Rotel and cheese depending on desired spice level.
- Add cayenne or smoked paprika for extra heat and flavor.
- Reheat in oven for best texture; avoid microwaving for too long.
- Great served with dipping sauces or alongside salads.
