Ingredients

For the Beef Kebabs:

1 lb ground beef

1 tsp salt

1/2 tsp black pepper

1 tsp ground cumin

1 tsp ground coriander

1/2 tsp garlic powder or 1 clove garlic, minced

2 tbsp olive oil or neutral cooking oil

For the Toppings:

1/3 cup walnuts

1/4 cup raisins

For the Cucumber Yogurt:

1 cup plain Greek yogurt

1/2 cup cucumber, finely diced or grated

1 tbsp fresh dill or mint, chopped

1 tbsp lemon juice

1/4 tsp salt

Instructions

In a bowl, combine ground beef, salt, pepper, cumin, coriander, and garlic. Shape into 4 thick patties.

Heat oil in a skillet over medium-high heat. Add patties and press down firmly with a spatula for a deep sear.

Cook undisturbed for 3–4 minutes until a dark crust forms, then flip and cook for 2–3 minutes on the other side until just done.

Remove beef from the skillet. Add walnuts and raisins to the pan, toasting until walnuts are fragrant and raisins plump, about 1–2 minutes.

In a separate bowl, mix Greek yogurt, cucumber, herbs, lemon juice, and salt to make cucumber yogurt.

Spread cucumber yogurt on plates, top with beef kebabs, and garnish with toasted walnuts and raisins. Serve immediately.

Notes

Swap beef for ground lamb for a richer, more traditional flavor.

Add Aleppo pepper, chili flakes, or cinnamon to the beef for extra warmth.

Pistachios or almonds can replace walnuts for a different nutty crunch.

For a fresher finish, sprinkle with pomegranate seeds or thinly sliced red onion before serving.
