Ingredients
- 1 lb ground beef (80/20)
- 4 medium flour tortillas
- 1 cup shredded cheddar or American cheese
- 1/4 cup pickles, sliced
- 1/4 cup thinly sliced red or yellow onion
- 1/4 cup burger sauce or mayonnaise
- 1 tbsp mustard (optional)
- Salt and black pepper to taste
- 2 tbsp butter or oil (for frying)
Instructions
- Divide ground beef into 4 small, thin patties and season with salt and pepper.
- Heat a skillet over medium-high heat and cook patties, smashing them flat. Cook 2–3 minutes per side until crispy. Remove and set aside.
- Wipe out the skillet if needed. Add a little butter or oil and place a tortilla in the pan.
- On one half of the tortilla, layer cheese, a smashed patty (broken up if needed), onions, pickles, and burger sauce.
- Fold the tortilla over and cook until golden and crispy. Flip and cook the other side until cheese melts.
- Repeat with remaining tortillas and serve hot, sliced into wedges.
Notes
- Use plant-based meat or turkey for variation.
- Add bacon, jalapeños, or hot sauce for extra flavor.
- Make it a double-decker quesadilla with extra layers.
- Don’t overfill to keep tortillas crisp and easy to flip.
