Ingredients

  • 1 lb ground beef (80/20)
  • 4 medium flour tortillas
  • 1 cup shredded cheddar or American cheese
  • 1/4 cup pickles, sliced
  • 1/4 cup thinly sliced red or yellow onion
  • 1/4 cup burger sauce or mayonnaise
  • 1 tbsp mustard (optional)
  • Salt and black pepper to taste
  • 2 tbsp butter or oil (for frying)

Instructions

  1. Divide ground beef into 4 small, thin patties and season with salt and pepper.
  2. Heat a skillet over medium-high heat and cook patties, smashing them flat. Cook 2–3 minutes per side until crispy. Remove and set aside.
  3. Wipe out the skillet if needed. Add a little butter or oil and place a tortilla in the pan.
  4. On one half of the tortilla, layer cheese, a smashed patty (broken up if needed), onions, pickles, and burger sauce.
  5. Fold the tortilla over and cook until golden and crispy. Flip and cook the other side until cheese melts.
  6. Repeat with remaining tortillas and serve hot, sliced into wedges.

  • Use plant-based meat or turkey for variation.
  • Add bacon, jalapeños, or hot sauce for extra flavor.
  • Make it a double-decker quesadilla with extra layers.
  • Don’t overfill to keep tortillas crisp and easy to flip.
