Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • Salt, to taste
  • Black pepper, to taste
  • 1 teaspoon Italian seasoning
  • 2 cups cherry tomatoes
  • 8 ounces fresh mozzarella, sliced
  • 1/4 cup fresh basil leaves, chopped or torn
  • 1 tablespoon balsamic glaze (optional)

Instructions

  1. Preheat the oven to 400°F and line a large sheet pan with parchment paper.
  2. Place the chicken breasts on the sheet pan and drizzle with olive oil.
  3. Season the chicken with salt, black pepper, and Italian seasoning.
  4. Scatter the cherry tomatoes around the chicken.
  5. Bake for 20–25 minutes, or until the chicken reaches an internal temperature of 165°F.
  6. Remove from the oven and place slices of fresh mozzarella on top of each chicken breast.
  7. Return to the oven for 3–5 minutes, until the cheese melts.
  8. Sprinkle with fresh basil and drizzle with balsamic glaze before serving if desired.
