This Roasted Red Pepper, Spinach, and Mozzarella Stuffed Chicken is a flavorful and healthy meal that combines tender chicken breasts with roasted red peppers, fresh spinach, and melted mozzarella. 4 chicken breasts
1 cup roasted red peppers, sliced
1 cup fresh spinach
1 cup shredded mozzarella cheese
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon Italian seasoning
Salt and pepper to taste
Preheat the oven to 375°F (190°C).
Cut a pocket into each chicken breast, being careful not to slice all the way through, creating a space for the stuffing.
In a bowl, mix the roasted red peppers, spinach, and mozzarella cheese.
Stuff each chicken breast with the red pepper, spinach, and mozzarella mixture, packing the stuffing generously.
Season each stuffed chicken breast with garlic powder, Italian seasoning, salt, and pepper.
Heat olive oil in a large oven-safe skillet over medium-high heat. Once hot, add the stuffed chicken breasts and sear for 3-4 minutes on each side until golden brown.
