Ingredients

  • 2 large carrots, peeled and chopped
  • 1/2 cup sweet potato or pumpkin (lightly steamed if needed)
  • 1 orange or tangerine, peeled
  • 1/2 cup mango or papaya chunks
  • 1 tbsp freshly squeezed lemon juice
  • 1/2 inch fresh ginger (optional)
  • 1/21 cup water or coconut water, as needed
  • Optional: a handful of spinach or kale

Instructions

  1. If using a juicer, juice the carrots, sweet potato or pumpkin, orange, mango, and ginger.
  2. If using a blender, combine all ingredients with water or coconut water and blend until smooth. Strain if desired for a lighter texture.
  3. Stir in lemon juice and taste, adjusting for brightness or sweetness.
  4. Pour into a chilled glass and serve immediately.
