Ingredients
- 2 large carrots, peeled and chopped
- 1/2 cup sweet potato or pumpkin (lightly steamed if needed)
- 1 orange or tangerine, peeled
- 1/2 cup mango or papaya chunks
- 1 tbsp freshly squeezed lemon juice
- 1/2 inch fresh ginger (optional)
- 1/2–1 cup water or coconut water, as needed
- Optional: a handful of spinach or kale
Instructions
- If using a juicer, juice the carrots, sweet potato or pumpkin, orange, mango, and ginger.
- If using a blender, combine all ingredients with water or coconut water and blend until smooth. Strain if desired for a lighter texture.
- Stir in lemon juice and taste, adjusting for brightness or sweetness.
- Pour into a chilled glass and serve immediately.
Notes
- Blend in banana or Greek yogurt for a creamier texture.
- Add pineapple or passionfruit for extra tang.
- Turmeric adds anti-inflammatory benefits.
- Store in the fridge up to 2 days; shake before serving.
