Ingredients

1 package (16-20 oz) refrigerated cheese ravioli

1 bunch fresh asparagus, trimmed and cut into 2-inch pieces

1 pint cherry tomatoes, halved

4 cloves garlic, minced

2 tbsp olive oil

1 tsp dried oregano

1 tsp dried basil

Salt and black pepper, to taste

Fresh basil or parsley for garnish (optional)

Instructions

Cook the Ravioli: Bring a large pot of salted water to a boil. Add ravioli and cook according to package instructions (3-5 minutes). Drain and reserve some pasta water.

Sauté the Asparagus and Garlic: While ravioli is cooking, heat olive oil in a skillet over medium heat. Add asparagus and sauté for 3-4 minutes until tender but crisp. Add garlic and cook for 1 more minute until fragrant.

Add Tomatoes and Seasoning: Add halved tomatoes, oregano, basil, salt, and pepper to the skillet. Cook for 2-3 minutes until the tomatoes soften and release their juices.

Combine the Ravioli and Veggies: Add cooked ravioli to the skillet and toss gently with the veggies. Add a splash of reserved pasta water to create a light sauce. Adjust seasoning if needed.

Serve and Garnish: Serve the ravioli and veggie mixture in bowls, garnished with fresh basil or parsley.
