Ingredients

  • 3 overripe bananas, mashed
  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar (or brown sugar)
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 egg
  • 1/4 cup milk (or non-dairy milk)
  • 1/3 cup vegetable oil or melted butter
  • 1 tsp vanilla extract
  • Optional: 1/2 cup chocolate chips, chopped walnuts, or 1 tsp cinnamon

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it.
  2. In a large bowl, mash the bananas until smooth.
  3. Whisk in the egg, milk, oil or butter, and vanilla until well combined.
  4. Add sugar, then sift in the flour, baking powder, baking soda, and salt. Stir just until combined—do not overmix.
  5. Fold in any optional add-ins like chocolate chips or nuts.
  6. Divide the batter evenly among muffin cups, filling each about 3/4 full.
  7. Bake for 18–22 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let cool in the pan for a few minutes before transferring to a wire rack to cool completely.
