  • 3 large eggs
  • 1/2 cup shredded cheese (cheddar or mozzarella)
  • 1/2 cup cooked sausage, crumbled
  • 1/4 cup milk or cream
  • 1/4 cup bell peppers, diced
  • 2 tablespoons green onions, chopped
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. Roll out the puff pastry slightly and place it on the prepared baking sheet.
  3. Score a small border around the edges of the pastry.
  4. In a bowl, whisk together eggs, milk, salt, and pepper.
  5. Brush the pastry lightly with olive oil.
  6. Pour the egg mixture over the center, keeping it within the border.
  7. Sprinkle cheese, cooked sausage, bell peppers, and green onions evenly on top.
  8. Bake for 15–20 minutes until the pastry is golden and the eggs are set.
  9. Let cool slightly, slice, and serve.

Notes

  • Swap sausage with smoked salmon or keep it vegetarian using mushrooms and spinach.
  • Add herbs like thyme or parsley for extra flavor.
  • Try different cheeses such as feta or goat cheese.
  • Avoid overfilling to prevent soggy pastry.
  • Store leftovers in the refrigerator for up to 2 days.
  • Reheat in the oven to maintain crispiness.
