Ingredients

4 8-inch flour tortillas

½ cup shredded mozzarella cheese (~2 oz)

1 cup pizza sauce (¼ cup per quesadilla)

1/2 cup pepperoni slices (or more if you like it extra cheesy)

Instructions

Heat the Skillet: Preheat a non-stick skillet over medium heat. No oil or butter is needed; just ensure the skillet is hot.

Assemble the Quesadilla: Place one tortilla flat on a clean surface. Spread about ¼ cup of pizza sauce evenly over the tortilla, leaving a small border around the edges. Sprinkle 2 tablespoons of shredded mozzarella cheese over the sauce, then layer with 6-8 slices of pepperoni.

Cook the Quesadilla: Place the prepared tortilla in the hot skillet and top with another tortilla. Cook for 2-3 minutes, or until the bottom tortilla is golden brown and crispy. Flip carefully and cook for another 2-3 minutes on the other side, until golden and the cheese is fully melted.

Serve and Enjoy: Remove from the skillet, cut into wedges, and serve with extra pizza sauce for dipping.
