Ingredients
- 12 oz smoked sausage, sliced into rounds
- 1 lb baby potatoes or red potatoes, halved or quartered
- 12 oz fresh green beans, trimmed
- 3 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- Salt, to taste
- Black pepper, to taste
- Optional: 1/2 teaspoon paprika or red pepper flakes for heat
Instructions
- Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper or foil.
- Toss potatoes with half of the olive oil, garlic, onion powder, Italian seasoning, salt, and pepper.
- Spread potatoes on the baking sheet and roast for 15–20 minutes.
- Meanwhile, prep green beans and slice the sausage.
- Add green beans and sausage to the baking sheet with remaining olive oil and extra seasoning.
- Toss everything together on the sheet and spread out evenly.
- Return to oven and roast for another 20–25 minutes, until potatoes are tender and sausage is browned.
- Serve hot, optionally with a squeeze of lemon or sprinkle of Parmesan cheese.
Notes
- Swap green beans for broccoli, asparagus, or Brussels sprouts.
- Add balsamic vinegar or Dijon mustard for extra flavor.
- Use turkey or chicken sausage for a lighter version.
- Spice it up with hot sausage or crushed red pepper flakes.
- Reheat in a skillet to regain crispiness.
