Ingredients

  • 12 oz smoked sausage, sliced into rounds
  • 1 lb baby potatoes or red potatoes, halved or quartered
  • 12 oz fresh green beans, trimmed
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • Salt, to taste
  • Black pepper, to taste
  • Optional: 1/2 teaspoon paprika or red pepper flakes for heat

Instructions

  1. Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper or foil.
  2. Toss potatoes with half of the olive oil, garlic, onion powder, Italian seasoning, salt, and pepper.
  3. Spread potatoes on the baking sheet and roast for 15–20 minutes.
  4. Meanwhile, prep green beans and slice the sausage.
  5. Add green beans and sausage to the baking sheet with remaining olive oil and extra seasoning.
  6. Toss everything together on the sheet and spread out evenly.
  7. Return to oven and roast for another 20–25 minutes, until potatoes are tender and sausage is browned.
  8. Serve hot, optionally with a squeeze of lemon or sprinkle of Parmesan cheese.
