Ingredients

  • 8 oz pasta (spaghetti, fettuccine, or any long noodle)
  • 3 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 3/4 cup grated parmesan cheese
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper
  • 3 cups water or low-sodium broth (just enough to barely cover pasta)
  • Fresh parsley or basil (optional, for garnish)

Instructions

  1. Place pasta in a large, deep skillet or saucepan. Add enough water or broth to just barely cover the pasta.
  2. Bring to a boil, then reduce heat and simmer, stirring occasionally, until pasta is al dente and most of the liquid is absorbed (about 9–11 minutes).
  3. Stir in the butter and minced garlic. Let the butter melt and mix with the starchy liquid to form a sauce.
  4. Remove the pan from heat and gradually stir in the grated parmesan until smooth and creamy.
  5. Season with salt and black pepper to taste.
  6. Serve immediately, garnished with chopped parsley or basil if desired.
